Local pickled shallots among world’s Top 55 best preserved vegetables
VOV.VN - The renowned culinary website Taste Atlas recently released a list of the 55 best pickled vegetables worldwide, with Vietnam’s pickled shallots (củ kiệu) earning a spot at 19th place.

In its February 19 announcement, Taste Atlas described pickled shallots as a traditional dish that appears simple but requires meticulous preparation.
The process involves selecting the best scallions, peeling them, sun-drying, preparing a mixture of salt, vinegar, and sugar, and fermenting them for 5 to 7 days.
This dish is a staple during Vietnamese Lunar New Year celebrations. It has a sweet and tangy flavourwith a distinctive aroma, often served alongside bánhchưng (glutinous rice cake) and thịt đông (jellied pork) in the North, and thịt kho hột vịt (braised pork with eggs), and bánh tét (rice cake) in the South.
In addition,
pickled shallots are also a popular side dish paired with roast meats, braised or fried dishes, or simply enjoyed with steamed rice and fish sauce.
Other dishes included on the list were Nošovickékysané zelí of the Czech Republic, Pikliz of Haiti, Escabeche de cebolla of Mexico, Kimchi of the Republic of Korea, Tsukemono of Japan, Turşu of Turkey, Kosher pickles of the US, Choucroute d'Alsaceof France, Xián cài of China, Sauerkraut of Germany, and Hafte bijar torshi of Iran.
