L’Olivier unveils new a-la-carte menu
L’Olivier Restaurant of the Sofitel Plaza Saigon Hotel boasts new dishes under the wing of new executive chef Marko Rankel.
Red prawn Carpaccio, lightly dabbed in white balsamic, topped with old parmesan shave and paired with yogurt lemon timbale, will be served as a sensational appetizer.
Crispy-skin French duck breast dipped in a tad of morel sauce, going with truffle cauliflower mouse and parisienne potato is a perfect introduction to French cuisine.
The rich and smoky pan fried foie gras served on Brioche gives a smooth creamy goodness, and terrine with Armagnac goes hand-in-hand with marinated plum, bitter almonds and cranberry sauce.
If foie gras is too much for guests’ gentle palate, a risotto cooked finely in herbs and spinach matches with aromatic grilled mushroom will serve them well.
Delighting in seafood, chef Marko also brings diners Vietnamese signature cobia fish cooked in Provencal style.
This dish combines the flavors of Provence with the balanced taste of fresh goat cheese ravioli.
