Four Vietnamese feature dishes among Top 52 Southeast Asian side dishes

VOV.VN - Four local speialities, including Rau muống xào tỏi (morning glory stir-fry), Quẩy (Vietnamese crullers), Rau sống (Vietnamese herb platter), and Mắm tôm chua (Fermented shrimp), have been named among the list of Top 52 Southeast Asian side dishes, as compiled by international food website TasteAtlas.

Rau muống xào tỏi (morning glory stir-fry) is a dish that is perfect for vegetarians, ranking seventh in the overall list. It's made using a combination of morning glory (water spinach), garlic, fish sauce, salt, sugar, and oyster sauce.

The water spinach is blanched, before then being stir-fried with garlic, salt, and sugar, while the fish sauce is added near the end of the cooking process. The dish also makes for a great accompaniment to white rice, the website revealed.

Meanwhile, Quẩy (Vietnamese crullers) was placed in 19th position, with the snack widely being regarded as a national culinary treasure in the nation.

Plain flour, leavening agents, salt, water, and sugar combine to create the basic dough, which is then left to rest for hours until it is ready. The snack is created in a fusion nof two pieces of dough which are swiftly deep-fried until golden brown, it added.

Rau sống (Vietnamese herb platter) came in at 39th and is a Vietnamese side dish that consists of a variety of fresh vegetables. The most common options include lettuce, herbs such as Thai basil (húng quế) or cilantro (rau mùi, rau răm), cucumbers, bean sprouts, and occasionally chili peppers. 

Moving down the list, 43rd position went to Mắm tôm chua (Fermented shrimp). The local delicacy consists of lightly fermented shrimp in a reddish sauce.

Although the shrimps are fermented, visually they often look fresh. The shrimps are rinsed, their heads are removed, and they are then marinated in rice wine, strained, and mixed with galangal, bamboo, garlic, red chilis, fish sauce, and sticky rice.

Topping the list is Perkedel of Indonesia. The other delicacies to feature in the Top 5 Southeast Asian slide dishes also come from Indonesia, such as Tempe goring, Tempeh mendoan, Sambal tomat, and Sambal.

Furthermore, the list includes Lumpia of the Philippines, Beef kway teow of Singapore, Khao niao of Laos, and Roti jala of Malaysia.
