200 lotus-based dishes to set record at Vietnam Green Food Festival

VOV.VN - The 2025 Green Food Festival, due to take place at Binh Phu Park in Ho Chi Minh City from October 31 to November 4, is expected to set a national record by showcasing 200 vegetarian dishes made from lotus.

The festival will bring together more than 250 booths, helping locals and tourists to discover the exquisite vegetarian flavours. A special vegetarian buffet featuring more than 100 special dishes from the three regions of Vietnam will be held.

As part of the festival, the organisers will hold a charitable programme themed “Ngày hội Yêu thương” (Love festive day), offering 1,000 vegetarian meals to disadvantaged children.

The festival will also include international culinary seminars with the participation of domestic and international experts to discuss topics such as green gastronomy trends, sustainable tourism, and the role of food in environmental protection.

A wide range of activities will get underway, including "Green Master Chef Vietnam 2025" and "Green Future Chef Vietnam 2025" to create a playground for both professional and aspiring chefs—especially the Gen Z generation—encouraging a shift toward healthier, eco-conscious eating habits. A Food Waste Recycling Festival will also be held to raise awareness about reducing food waste and promoting sustainable consumption.

The highlight of the festival will be the lotus-themed vegetarian feast, expected to set a national record with over 200 unique dishes crafted entirely from various parts of the lotus plant.

According to the organisers at a press conference recently, this year's event the event is expected to draw over 150,000 visitors, making it one of the largest vegetarian festivals in the country. Beyond celebrating Vietnamese vegetarian cuisine, the festival aims to connect farmers and consumers, while promoting a lifestyle of clean eating and green living.

The 2025 Green Food Festival will be held by the HCM City Food and Beverage Association and the Binh Phu ward People’s Committee.

Vegetarian food market growing 8.1% annually

Vietnam’s vegetarian food market is growing at an average rate of 8.1% per year and is projected to reach a value of US$220.5 million by 2033, according to market research firm IMARC Group.
